Ingredients
| 2 1/2 lb | sour apples, peeled, cored and sliced | 1.15 kg |
| 3 1/2 lb | ripe tomatoes, peeled and chopped | 1.5 kg |
| 5 | medium onions, peeled and chopped | 5 |
| 3 | cloves garlic, crushed and chopped finely | 3 |
| 2 cups | brown sugar | 500 mL |
| 2 1/2 cups | malt vinegar | 600 mL |
| 1 tbsp | coarse salt | 15 mL |
| 1 tsp | ground ginger | 5 mL |
| 1/8 tsp | nutmeg | 0.5 mL |
| 1/4 tsp | cayenne pepper | 1 mL |
Directions
Put apples and tomatoes in heavy pan with 1 cup/250 mL vinegar.
Simmer until tender, about 1 hour, stirring occasionally.
Add onions and garlic, then remainder of ingredients including the rest of the vinegar and simmer until thick, about 1 hour.
Stir often once the sugar is added.
Put into sterilized jars and seal. Store in cool place.
