Ingredients
| 1 1/3 cups | chicken broth | 300 mL |
| 1/2 cup | uncooked long grain rice | 125 mL |
| 1 tbsp | vegetable oil | 15 mL |
| 1/4 cup | sliced green onions | 60 mL |
| 1/4 cup | thinly sliced mushrooms | 60 mL |
| 1/4 cup | chopped fresh parsley | 60 mL |
Directions
Bring broth to a boil in medium saucepan.
Stir in rice, cover, reduce heat and simmer 20 to 25 minutes, or until liquid is absorbed.
Remove from heat. Heat oil in small skillet; sauté onions and mushrooms until crisp-tender.
Toss onions, mushrooms and parsley with rice. Serve while hot.
Chef's Note
DELICIOUS!!!! I use dried parsley if I cannot get the fresh...
