Ingredients

1 1/3 cups chicken broth 300 mL
1/2 cup uncooked long grain rice 125 mL
1 tbsp vegetable oil 15 mL
1/4 cup sliced green onions 60 mL
1/4 cup thinly sliced mushrooms 60 mL
1/4 cup chopped fresh parsley 60 mL

Directions

Bring broth to a boil in medium saucepan.

Stir in rice, cover, reduce heat and simmer 20 to 25 minutes, or until liquid is absorbed.

Remove from heat. Heat oil in small skillet; sauté onions and mushrooms until crisp-tender.

Toss onions, mushrooms and parsley with rice. Serve while hot.

Chef's Note

DELICIOUS!!!! I use dried parsley if I cannot get the fresh...
