Ingredients

1 jar marshmallow creme (7 1/2-oz/198-g) 1 jar
3 1/2 cups confectioner's sugar 350 g
1 tsp vanilla 5 mL
1/4 tsp almond extract 1 mL
1 lb caramels 450 g
10 cups chopped nuts 2.25 L

Directions

Combine marshmallow creme, sugar and flavorings. Knead until ingredients are blended and mixture is soft. Form into balls about the size of pecans or smaller.

Cover with plastic wrap and chill toroughly.

Melt caramels in top of double boiler.

Dip balls into melted caramels and then roll them in chopped nuts. Store covered with plastic wrap.

Chef's Note

Can be kept several weeks.
