Ingredients
| Breading | ||
| 1 cup | dried bread crumbs | 50 g |
| 1/3 cup | flour | 40 g |
| 1/3 cup | parmesan cheese (shake on or fresh) | 35 g |
| 2-3 tbsp | dried basil | 30-45 mL |
Directions
Mix the first four ingredient together in a shallow bowl.
To coat chicken first prepare it appropriately. Cup up or pound to flaten.
To coat use 3 egg whites or 1/2 cup/125 mL extra virgin olive oil in a shallow bowl. Coat meat until covered and dip in bread curmb mixture until well coated.
Cook in the oven at around 350°F/180°C on a lightly greased cookie sheet. Time varies depending on the thickness of what you are making.
Chef's Note
This recipe makes excellent chicken parmesan. Take cooked and breaded pieces of chicken place in glass baking dish and cover in tomato sauce and cheese. Let cook at 350°F/180°C until bubbly and cheese is melted. Let stand 10 minutes before serving with long noodles of your choice.
This breading could be used in anything other kind of meat and eggplant as well. Parmesan can be adjusted to fit other meats or eggplant.
