Curried Chicken Tea Sandwiches

Ingredients

2 cups cubed, cooked chicken 300 g
1 medium unpeeled red apple, chopped 1
3/4 cup dried cranberries 100 g
1/2 cup thinly sliced celery 60 g
1/4 cup chopped pecans 25 g
2 tbsp thinly sliced green onions 15 g
3/4 cup mayonnaise or salad dressing 175 g
2 tsp lime juice 10 mL
1/2 tsp curry powder 2 mL
12 slices bread 12
  lettuce Leaves  

Directions

In a bowl, combine the first six ingredients.

Combine mayonnaise, lime juice and curry powder; add to chicken mixture and stir to coat. Cover and refrigerate until ready to serve.

Cut each slice of bread with a 3-in/7-cm heart-shaped cookie cutter. Top with lettuce and chicken salad.

Chef's Note

At the Victorian-theme bridal shower I hosted, I spread this dressed-up chicken salad on bread triangles. It's also appealing served on a lettuce leaf. Apples and dried cranberries add color and tang. - Robin Fuhrman, Fond du Lac, Wisconsin
